Usually Matte (Flat) for living rooms, bed rooms and most main area's.
Usually Satin for bathrooms with showers or bathtubs.
Depending on the project, I may spray or roll.

Bathrooms usually have more sheen to withstand moisture and mildew.
Most rooms look better with matte (flat paint) which provides a softer, warmer appearance. Lower sheen will defuse, absorb light which is ideal for hiding construction and/or drywall imperfections as well.
Regardless of what sheen you require, I do an awesome job painting flat/ smooth or textured ceilings.
